Pancakes on a Sunday is the epitome of perfection, don’t you agree? Fluffy, fresh and comforting on their own, but paired with the perfect Spring accompaniments of fresh fruits and flowers, there really is nothing that can compare. Considering it’s already Friday, let’s just forget about the work day and start thinking to the weekend, yes?!
To make a whole load (at least enough for 4 people) of pancakes, you’ll need:
- 2 cups of plain flour (or self-raising a la Jamie Oliver style)
- 2 cups of milk
- 2 eggs
- Toppings – butter, honey, cinnamon, fruits of your choice
Whisk all the ingredients together while your non-stick pan is heating up on the stove then carefully spoon a ladleful of mixture into the pan, using a spatula to flip it round (or just try and flip it hahah) to cook both sides through
Chop up your toppings onto a plate – I used bananas, strawberries and passionfruit – et voila! Pancakes, super easy (just like a Sunday morning) xx
